Butter Bean & Sweet Pea Dip

Makes 2 cups

Week 9

This dip is so creamy and delicious. Serve it with Crudité, pita chips or crackers. It also tastes great as a sandwich spread or use it as a sauce and fold it into warm pasta.

2 cups cooked butter beans

1 cup cooked peas

1 tsp. chopped garlic

1 tbsp. tahini paste

1 lemon, juiced

2 Tbsp. fresh mint, chopped

1 tbsp. olive oil

salt, to taste

Combine all ingredients in the bowl of a food processor and puree until smooth and creamy.
